SPICY OATMEAL CAKE 
1 c. oatmeal
1 1/4 c. boiling water
1 1/2 c. brown sugar
1/2 c. shortening
1 tsp. baking soda
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 c. flour

TOPPING:

6 tbsp. melted butter
2/3 c. brown sugar
1/4 c. cream
1 c. coconut
1/2 tsp. vanilla
Chopped nuts to taste

Pour boiling water over oats and let stand 15 minutes. Cream shortening and sugar. Beat in vanilla and eggs, then add oats. Mix well. Add flour, soda, salt and cinnamon. Bake at 350 degrees for 30-35 minutes. Spread topping on cake and return to oven for 10-15 minutes or until topping bubbles.
