CHARLOTTE'S RED CABBAGE | |
This recipe is even better the 2nd day, but is really easy to make while cooking a big fancy Holiday dinner so I usually make extra for leftovers. It is also better if you let it scorch just a bit a few times. 2 tbsp. butter 2 tbsp. sugar medium red cabbage 1 tbsp. vinegar 2/3 cup water, divided 2 tbsp. currant (or any red fruit) jelly Chop or julienne cabbage. In heavy bottomed pot melt butter. Add sugar til just browning. Stir in cabbage and coat thoroughly, add 1/3 cup of water and vinegar, reduce heat to low. Cook uncovered for 2 hours on low heat stirring thoroughly every 15 minutes or so, adding remaining 1/3 cup of water when cabbage is beginning to scorch/stick. Remove from heat and add currant jelly to finish. This is delicious and low fat/sugar. Thanks Mom! Submitted by: Lisa |
