SWEET AND SOUR RED CABBAGE WITH
SAUSAGE
 
1 lb. smoked sausage (kielbasa or turkey sausage)
2 tbsp. canola oil
1 cup chopped onion
4 to 6 cups shredded red cabbage (about 1/2 a medium cabbage)
3 tbsp. brown sugar
1/2 cup water, apple juice or chicken broth
1/4 cup raisins, dried cranberries or dried cherries
3 tbsp. apple cider vinegar
1/2 tsp. salt
1/2 tsp. freshly ground pepper

Cut sausage in half and then into 2-inch pieces. Brown in skillet over medium-high heat.

In deep pot, place oil and heat to medium-high. Add onions and cook till translucent, about 5 minutes. Add cabbage and cook stirring occasionally about 5 minutes. Add sugar and water, juice or broth.

Add dried fruit to cabbage along with vinegar, salt and pepper. Cover and cook 10 minutes, stirring once or twice.

Top cabbage with browned sausage, cover and cook over low heat for 30 minutes.

Serve with potatoes or sweet potatoes.
