POTATO SALAD 
4 lg. potatoes
4 boiled eggs
1 sweet red onion
2 sticks celery
3-4 dill pickles
3-4 strips bacon, fried crisp & drained
Mayonnaise to taste and consistency

Add lemon juice for tartness if desired. Boil potatoes in skins; cook, peel and cut in small cubes. Chop onions, eggs, celery and pickles; add to potatoes. Add mayonnaise, lemon juice, crumbled bacon, salt and pepper; stir well. Garnish with paprika and parsley.
