MILDRED'S POTATO SALAD | |
6 potatoes, boiled & chilled, peel when ready to assemble 6 eggs, hard boiled & chilled, peel when ready to assemble 1 sm. sweet onion or 6 green onions, chopped sm. 1 lg. stick celery, chopped fine 1 c. lite Hellmann's mayonnaise 1 tbsp. lemon juice 1 tsp. salt 1/2 tsp. pepper 1. Cut potatoes into 1/2" cubes. 2. Cut eggs into 1/4" cubes. 3. Put these ingredients in a large mixing bowl. Add chopped onions and chopped celery. 4. In a small bowl mix mayonnaise, lemon juice and seasonings. Pour over egg/vegetable mixture. Stir gently until all ingredients are well mixed. 5. Chill several hours or serve immediately. Keeps its flavor several days when properly refrigerated. This is a family recipe that everybody loves. |
