APPLE & PANCAKE COBBLER IN A FRY PAN | |
butter apples (I use about 2) brown sugar white sugar pancake mix (Bisquick, etc.) milk First cut your apples in to nice bite-sized chunks, I quartered mine and then cut it up from there. Then sauté your apples, I just used two for this, peeled or unpeeled in a generous amount of butter, brown sugar and white sugar, on a slow simmer. Sauté until soft and butter and sugars have mixed together creating a sauce. While the apples are simmering mix up about 6 pancakes worth of batter, whatever the pancake mix calls for. Increase the heat to about 5 then move apples off to the side. Pour generous amount of pancake batter in fry pan, about 3 to 4 pancakes worth or less depending on how hungry you are. Let set up a little bit then put the apples and sauce on top of the pancakes pour about 2 more pancakes worth of batter on top of that and cook until it's almost golden brown, not sure how to flip this I used two fry pans and clumsily flipped between the two. When getting close to golden brown spread more butter and sprinkle more brown sugar on each side and finish cooking. Probably could work it in the oven but I wouldn't know the temperature or time, maybe some one could work that part out and leave a note. If you are really hungry will feed one, otherwise you generally need 8 college kids in a dorm room to finish it off. But seriously will probably feed 4 to 6 people easily. CHEERS!
