CHICKEN CACCIATORE 
2 frying chickens
1/4 c. olive oil
2 med. onions, sliced
2 green peppers, sliced
1 red pepper, sliced
1 clove garlic, minced
3 tomatoes, sliced
1 1/2 c. tomato puree
2 tbsp. wine vinegar
1 1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. allspice

Brown chicken parts in olive oil. Remove to casserole. In same pan, brown onions, pepper, and garlic. Add remaining ingredients; simmer for 5 minutes. Pour over chicken. Place casserole in 375 degree oven for 40-45 minutes or until chicken is tender.
