EASY CHICKEN CACCIATORE | |
2 lbs. chicken 2 tbsp. shortening 1 (10 1/2 oz.) can Campbell's tomato soup 1/2 c. chopped onion 1/2 med. green pepper, cut into strips 1/4 c. Chianti or other dry red wine 2 lg. garlic cloves, chopped 1 tsp. oregano, crushed 1/4 tsp. salt In skillet, brown chicken in shortening; pour off fat. Add remaining ingredients, except green pepper strips. Cover; cook over low heat 30 minutes. Add green pepper strips. Cook 15 minutes longer, stirring occasionally. Enjoy. Recipe can be prepared ahead. Serves 4. |
