20 Ritz crackers, crushed 3 egg whites 1 tsp. baking powder 1 c. sugar 1 c. chopped pecans 1 c. whipping cream Crush crackers with rolling pin. Add baking powder and mix well. Beat egg whites until stiff but not dry; add sugar slowly and continue beating. Beat until glossy and sugar is thoroughly mixed. With a spoon, stir in crumbs and pecans. Add 1 teaspoon rum or vanilla. Grease (lightly) a 10" pie pan; put mixture in pie pan and bake at 350 degrees for 20 to 25 minutes. Remove from oven and cool completely. Whip cream and add 2 teaspoons of rum or 1 teaspoon vanilla. Pour over pie and let set overnight. Special Notes: This recipe may be doubled and baked in a 13"x9"x2" pan. After pie is removed from oven a "well" will form in the center, perfect for whipped cream. |
