CHICKEN CACCIATORE | |
1 med. green pepper, chopped 1 med. onion, sliced thin 2 tbsp. water 1 (16 oz.) can tomatoes, undrained 1 (8 oz.) can tomato sauce 1 tbsp. parsley flakes 1 tsp. salt 3/4 tsp. dried oregano leaves 3/4 tsp. paprika 1/4 tsp. pepper 1/4 tsp. garlic powder 1/4 tsp. dried basil leaves 1/4 c. dry red wine or water 1 (2 1/2 to 3 lb.) frying chicken, cut up Combine green pepper, onion and water in 3-quart microwave-safe casserole. Cover with casserole lid. Microwave (high) 5 to 6 minutes or until partially cooked. Stir in remaining ingredients except chicken. Cover. Microwave (high) 5 minutes. Add chicken. Cover. Microwave (high) 20 to 30 minutes or until chicken is tender, stirring once. If desired, serve with cooked rice. |
