CRUSTLESS SPINACH PIE 
1 lb. Ricotta cheese
1 c. grated Mozzarella cheese
3 eggs, slightly beaten
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
2 tbsp. vegetable oil
1 tsp. salt
1/2 tsp. dill
1/2 tsp. garlic powder or ham (optional)
1/4 c. combined sautéed mushrooms and zucchini, sliced (optional)

Preheat oven to 350°F. Combine cheeses with eggs. Mix well. Blend in spinach. Add remaining ingredients. Pour into buttered 10-inch springform pan. Drizzle top with small amount of oil for a golden brown color. Bake at 350°F for 40 minutes. Serve warm or at room temperature.
