INSTANT POTATO CANDY 
1/4 cup instant potato flakes (must be flakes)
1/4 cup water
1 (1 lb.) box confectioners' sugar
1/2 cup peanut butter

Combine the potato flakes and water in a mixing bowl. Beat until the mixture holds together and looks like thick mashed potatoes. Start adding the confectioners' sugar, a cup at a time, and continue adding until the mixture can be formed into a ball.

Roll the mixture out to a rectangle about 12x8-inches. Spread the peanut butter over the potato mixture. Roll up like a jelly roll, starting with the 12-inch side.

Cover with plastic wrap and refrigerate until firm. Cut into slices about 1/4 to 1/2-inch thick.

Absolutely amazing! I used 1/4 cup pre-made low calorie gluten-free potatoes for my instant mash and then 1 lb of powdered sugar kneaded until a ball of dough forms. Dust parchment with powder, 1/4-inch thick rectangle. Roll out dough, spread peanut butter, marshmallow fluff, hazelnut spread or any other spread you'd like and refrigerate until firm enough to slice into 1/4-inch pieces and Enjoy!

When I was a little girl (ninety years ago) my mother made peppermint flavored patties using potatoes. She colored them in pastel colors and sent them to school with me for a birthday treat for the class. I haven't thought of them in years. Does anyone have a recipe for them?

1/2 cup mashed potatoes
1 teaspoon peppermint flavouring
Food colouring to suit
3 1/2 cups sifted icing sugar

Combine potatoes and half the sugar, add flavouring and colouring. Mix in remaining sugar until still. Knead until smooth. Roll into long rolls, then cut into bite-sized pieces. This mixture may be divided and different colours added.
