GARLIC MASHED POTATOES 
1 1/2 lb. red-skinned potatoes, scrubbed, cut in cubes, skins on
6 tbsp. butter
6 garlic cloves, roasted (see note)
1/2 cup heavy cream
salt, to taste

Cook potatoes and drain. Mash with remaining ingredients.

Note: Roast garlic cloves in 450°F oven until soft, about 15 to 20 minutes.
