LOW, LOW FAT (NO SUGAR) PANCAKES 
2 egg whites
1 c. buttermilk
2 to 3 tbsp. natural applesauce (no sugar)
1 c. flour (can use SMALL PART whole wheat flour or wheat germ)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Mix ingredients together. Spray griddle with Pam. Pour batter onto hot griddle. Serve with spreadable fruit (no sugar) or applesauce.

I used skim milk, replacing the buttermilk. My 18 month old daughter and me ate these together. We will make again. We both loved it. I heard "mmmm" a few times!
