GREEN CHILE QUICHE 
1 pie crust
1 (4 oz.) can chopped green chiles
1 c. shredded Jack cheese
1 1/2 c. shredded cheddar cheese
3 eggs
1 1/2 c. half and half
1/4 tsp. cumin powder

Whisk eggs, half and half and cumin together. Place cheeses in pie shell reserving 1/2 cup cheddar for top. Sprinkle chiles over cheese, reserving a few for the top.

Pour egg-milk mixture over the cheese. Sprinkle with remaining cheeses and chiles. Bake at 350 degrees for 35-40 minutes or until knife inserted in center comes out clean. Serve warm. Good with cooked bacon sprinkled on top at serving time.
