PANCAKES 
2 c. plain (all-purpose) flour
pinch of salt
3 tsp. baking powder
1/3 c. sugar
2 eggs
1 1/2 c. milk
2 1/2 oz. melted butter

Sift the dry ingredients into a bowl; beat eggs lightly in a smaller bowl. Make a well in the center of dry ingredients and add eggs, milk and butter. (Add extra milk to the desired consistency.) Cook over medium heat on a nonstick griddle until bubbles surface; flip and cook until golden brown. I remember that my grandfather, Zane P. McCoskey, used to make pancakes for my brother and I, for breakfast. They were great.
