MULE SKINNERS GRAVY 
1 pt. tomatoes or 1 lg. can
1/4-1/2 c. cornmeal
3 eggs
Salt, pepper, fish grease

After frying fish, drain grease, leaving brown crumbs. Add cornmeal, brown. Add tomatoes, salt, pepper. Add beaten eggs. Stir until eggs are cooked. Serve over grits, with fish.
