CHICKEN FRUIT SALAD 
3 c. diced cooked chicken
1 c. finely chopped celery
Mix 1 tbsp. salad oil and 1 tbsp. lemon juice
1/2 c. mayonnaise
1 c. diced pineapple chunks or green grapes
1 c. coarsely chopped walnuts
Lettuce

1. Toss together lightly the chicken, celery, oil and lemon juice. Chill for several hours.

2. When almost ready to serve, add mayonnaise, nuts and fruit. Chill again.

3. Serve on lettuce and garnish with bits of fruit.

White seedless grapes or orange slices may be used instead of the pineapple but are not as good. Serve with hot rolls and the lemon squares (elsewhere in book).
