TACOS 
5 lb. beef, ground
1 tsp. garlic, minced
1/2 tsp. black pepper
2 tsp. salt
3 c. tomatoes, canned, finely crushed
1 1/2 tsp. sugar
1/2 c. onions, chopped
2 tbsp. jalapeno peppers, chopped fine
2 tbsp. cumin
50 tortillas, shaped & fried
1 qt. Cheddar cheese, shredded
1 1/2 qt. lettuce, shredded
1 qt. tomatoes, fresh, chopped

Vary amount as desired.

Brown beef and drain well. Add garlic, black pepper and salt to beef. Bring to a simmer. Combine canned tomatoes, sugar, onions, jalapeno peppers and cumin; blend well.

Add tomato mixture to beef and bring to a simmer for 15 minutes. (Tomato juice or water may be added if needed.) Place about 1/4 cup of meat sauce in each tortilla.
