GRANDMA'S BEST BREAD AND BUTTER PICKLES | |
12 med. or 20 sm. cucumbers, sliced 1/4 inch thick 1 1/2 lb. thin sliced sweet onion 1/2 c. granulated (pickling) salt 3 c. vinegar (white and/or cider) 3 c. white sugar 1/2 tsp. turmeric 1/4 c. mustard seeds 2 tsp. celery seeds 1/4 tsp. cayenne (red) pepper Mix cucumbers, onion, salt in glass or stainless steel bowl. Let stand uncovered for 3 hours. Then put in colander, drain. Rinse with cold water; drain again; set aside. In large pot, mix vinegar, sugar, turmeric, mustard seed, celery seed, and cayenne pepper. Bring to a boil. As this just comes to a boil, add in the onion-cucumber mixture. Bring to boil again; reduce to simmer, simmer 2 minutes only. DO NOT over cook! Pour mixture in hot, sterile jars, seal. Process. |
