BANANA OATMEAL MUFFINS 
1/3 c. uncooked oatmeal
1/4 c. buttermilk
1/4 c. vegetable oil
1/2 c. white sugar
1/4 c. brown sugar
1 egg
2 ripe bananas, mashed
2 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped pecans
1/2 tsp. vanilla

Combine oatmeal and milk. Let set to soften. Add all other ingredients. Beat well. Add a little more milk if mixture is too thick. Spray muffin pan for 12 with cooking spray.

Bake 20 minutes at 350°F.
