BANANA OATMEAL MUFFINS 
1 c. uncooked oats
1/2 c. milk
1 1/2 tsp. vinegar
1 sm. ripe banana
1 egg
1/2 c. dark brown sugar
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. soft shortening or oil

In medium bowl put oats with sour milk (1/2 cup milk and 1 1/2 teaspoons vinegar) and let stand a few minutes. Mash the banana and add egg, brown sugar, flour, baking powder, baking soda, salt and oil. Stir together and add to oats. Be careful not to stir too much.

Bake at 400 degrees for 15-18 minutes. Makes 12 regular size muffins. Or, to make a loaf of bread, bake at 400 degrees for 35-40 minutes.
