HONEY RAISIN BRAN MUFFINS 
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2 1/2 c. Kellogg's Raisin Bran Cereal
1 c. milk
1/3 c. honey
1 egg
3 tbsp. vegetable oil

Stir together flour, baking powder and salt. (Set Aside). In large mixing bowl, stir together Kellogg's Raisin Bran Cereal, milk and honey. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin-pan cups. Bake at 400 degrees for 18 to 20 minutes or until lightly browned.

Needs some serious sweetening. I used closer to a half cup of honey, and I also used 2 tbsp. of molasses. I also used stone ground whole wheat flour instead of all purpose flower, too, but I don't think that had much to do with it. I'll be using even more honey next time, and maybe some brown sugar sprinkled on top. Loved the taste otherwise, and the texture.

This recipe is very easy and delicious. I also added the teaspoon of cinnamon, and I added some pecans to the top of each muffin. When they came out, I brushed them with a little sugar and sprinkled a little raw sugar on top. They were sweet enough as is, but the raw sugar added some nice crunch.

I added a teaspoon of cinnamon. I tried it without cinnamon. Cinnamon made a big difference. Alot more flavor.
