CRACKER ENCHILADAS 
3 lg. onions
1 clove garlic
1/4 c. oil
1 lb. ground beef
3 tbsp. flour
8 oz. can tomato sauce
1 c. water
2 tbsp. vinegar
1 can corn
1 can sliced olives
1 tsp. salt
3 tsp. chili powder
Ritz crackers
Grated sharp cheese

Cook to golden brown, 3 large onions and 1 clove garlic in oil until tender. Add ground beef and brown slightly. Sprinkle in 3 tablespoons flour and stir. Add tomato sauce, water, vinegar, corn, sliced olives, salt and chili powder.

Simmer 20 minutes. Line bottom and sides of greased pan with Ritz crackers. Pour in half of meat mixture. Spread with layer of grated sharp cheese. Then layer of crackers, rest of meat and top with grated cheese. Bake at 350 degrees for 45 minutes.
