VANILLA ICE CREAM 
5 med. eggs
3 c. sugar
3/4 tsp. salt
6 c. milk
6 c. whipping cream
2 1/4 tbsp. vanilla
3/4 tsp. lemon flavoring
8 Junket tablets

Combine eggs, sugar and salt in large bowl; beat until very thick, 3 to 5 minutes. Place milk and whipping cream in a 6 quart pot. Add egg mixture and stir. Turn heat to low and warm mixture. (It is warm when it feels lukewarm to touch of finger.)

Dissolve Junket tablets in 1 teaspoon water and crush until no lumps are left. Add flavorings, then stir this into warm milk and egg mixture. Pour carefully into can. Let set for 1 hour. Then put into ice cream freezer and make ice cream. Pack in freezer with lots of ice, cover with thick cloth and let it ripen for 1 hour.

VARIATIONS: Just before putting in ice cream freezer, add banana and walnuts or pancake syrup and pecans or pineapple.
