PINEAPPLE - CHEESE CASSEROLE 
1 lg. can pineapple chunks (in heavy syrup)
1 c. med. Cheddar cheese, grated
1/2 c. sugar
3 tbsp. flour
Ritz crackers
1/2 stick butter

Pour off half of the juice from the can of pineapple. Mix the remaining juice, all pineapple chunks and cheese together. In another bowl, combine sugar and flour. Stir into pineapple-cheese mixture and mix well. Pour into a casserole dish. Top with a layer of crushed Ritz crackers. Spoon melted butter over the top. Bake at 350 degrees for 30 minutes.
