PINEAPPLE - CHEESE CASSEROLE 
1 to 3 cans of chunk pineapple, drained (save the juice)
1 - 1 1/2 c. grated cheddar cheese
3 tbsp. flour
1/2 c. sugar
1 c. Ritz crackers
6 tbsp. butter

Butter casserole dish. Place a layer of pineapple (chunk) in casserole dish. Top with grated cheddar cheese (just enough to cover pineapple). If using a larger casserole dish, you can double all the ingredients except the cheese. Mix 3 tablespoons pineapple juice, 3 tablespoons flour and 1/2 cup sugar. Pour this mixture over pineapple and cheese. Top with 1 cup Ritz crackers crushed or enough to cover the top of the casserole dish. Pour 6 tablespoons melted butter over crackers. Bake at 350 degrees for 40 minutes or until crackers are slightly browned. Serve hot. Great with ham dinner. Enjoy!
