POTATO CASSEROLE 
1 (2 lb.) bag frozen hash brown chunks
1 c. cream of chicken soup
1/2 c. melted butter
1 c. chopped onion
1 pt. sour cream
2 c. grated Cheddar cheese
Salt and pepper to taste
Ritz cracker crumbs

Allow frozen hash browns to thaw. Mix the hash browns, soup, butter, salt, pepper, onion and sour cream. Pour into a 13x9 inch pan. Top with the cheese and cracker crumbs. Bake at 350 degrees for 45 minutes to 1 hour. Cover for first 1/2 hour.
