BASIC CHEESECAKE 
1 1/2 c. flour
1/2 c. sugar
3/4 c. softened butter

Mix ingredients and press in bottom of 9 inch springform pan.

CHEESECAKE:

3 lbs. softened cream cheese
2 c. sugar
2 tbsp. vanilla
3 eggs
1 1/2 c. heavy cream (whipping cream)

Mix all ingredients, adding 1 egg at a time until just mixed in. Pour into springform pan on top of crust. Bake at 250 degrees for 2 1/2 - 3 hours, just until top starts to turn brown. Shut off oven and let sit for 3-4 hours. Refrigerate several hours before serving. Top with favorite toppings such as blueberries, strawberries, raspberries, or chocolate sauce.

Variations:

Add 12 ounce melted chocolate chips for chocolate cheesecake.

Add 1/2 cup amaretto and decrease cream to 1 cup for amaretto cheesecake.

Add 6 ounce grated semi-sweet chocolate for chocolate chip cheesecake.
