BASIC STREUSEL COFFEE CAKE | |
2 tsp. baking powder 1/2 tsp. salt 1/4 c. softened butter 3/4 c. sugar 1 beaten egg 1/2 c. milk 1/2 c. chopped peanuts 1 1/4 c. sifted flour 2 tbsp. melted butter 2 tsp. cinnamon 1/2 c. brown sugar 2 tbsp. flour In a bowl, blend 1/4 cup butter, egg and sugar. Mix in milk. Mix in 1 1/2 cups flour, baking powder and salt. Beat vigorously until lumpy. Pour half the batter into a greased baking pan. In a cup, combine 2 tablespoons flour, 1/2 cup brown sugar and cinnamon. Sprinkle half the mixture evenly over batter. Repeat. Combine peanuts with melted butter. Sprinkle over mixture. Bake at 350 degrees for 30-35 minutes. Remove pan to a rack. Let stand for 5 minutes. Cut into portions. Serves 6. |
