SUGAR FREE PEANUT BUTTER COOKIES 
1/4 cup butter
1/4 cup creamy peanut butter
6 tablespoons brown sugar substitute or Splenda for baking
1 tsp. vanilla
1 1/2 cups flour
1 egg
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp. salt
1/4 cup applesauce

Cream together butter, peanut butter, sugar substitute, egg, applesauce and vanilla.

Whisk together baking powder, baking soda, flour, and salt.

Add flour mixture to butter mixture; stir well. Drop by spoonfuls onto an ungreased cookie sheet. Bake at 375°F for 12 to 14 minutes; remove from oven when cookies are just set. Do not over-bake; cookies should not brown.

I made this recipe but made several alterations to it. First of all I used 1/2 cup peanut butter, instead of an egg I used 1 tbsp. ground flax seed blended with 1/4 cup water, then instead of applesauce I used 1/8 cup of fat free Kefir and 1/8 cup of unsweetened apple juice and lastly I used 1 cup self rising flour and 1/2 cup of oatmeal flour. They turned out great and the flax seed gave it a little extra nutty flavor!

I baked these cookies for my diabetic clients and I was very disappointed. The cookies were not sweet enough and didn't have enough of a peanut butter taste.
