PAN - ROASTED POTATOES | |
6 med. potatoes, peeled 1 tsp. salt Water Paprika, parsley, or thyme leaves In 3 quart saucepan over high, heat potatoes, salt, and water to cover potatoes to boiling. Reduce heat to low, cover, and simmer 10 minutes. Drain potatoes; arrange around beef or pork roast in roasting pan. Turn to coat with drippings in pan. Bake 40 to 60 minutes at 325 degrees along with roast, turning occasionally, just until tender and evenly browned. To serve: Sprinkle potatoes with paprika, parsley, or thyme. Arrange around roast on platter. Variation: When not roasting with meat, boil potatoes as above. Meanwhile, preheat oven to 400 degrees. In a shallow baking pan, melt 1/2 cup butter. Add potatoes, turning to coat evenly. Bake, turning often, 40 minutes or until tender. |
