ROAST CARROTS WITH NEW POTATOES | |
1 lb. carrots, pared & sliced 1-1 1/2 lb. new potatoes 2 med. onions 4 cloves garlic 2 tbsp. olive oil 1/2 tsp. thyme or rosemary 1 tsp. salt Pepper to taste Preheat to 400 degrees. Add all ingredients. Toss to coat. Spread in roasting pan. Bake 1 hour or until well browned. Turn vegetables every 20 minutes. |
