GLAZE FOR SWEET POTATOES OR
CARROTS
 
2 tbsp. butter
2 tsp. flour
1/3 c. orange juice
1/4 c. light brown sugar
Dash of cinnamon
1/2 tsp. vanilla

Melt butter in a saucepan on medium heat. Blend flour into butter, then add orange juice, sugar, cinnamon and vanilla. Stir well. This will thicken some. Fold cooked carrots or a cooked sweet potatoes into glaze mixture and put in a casserole dish. Heat when ready. Makes ahead well.

This was great. Everyone loved it. Made ahead of time. Baked sweet potatoes early in the day, skins on. Kept on warming tray till almost time to serve. Cut 1 1/2 inch slices, arranged on platter and drizzled warmed glaze over all & sprinked with Pecans just before serving. YUMMY! (doubled the recipe for 6 large yams)

I made this glaze for peeled steamed carrots. I used 2 pounds of carrots and this was more than enough glaze. Loved the taste!
