QUAKER OAT COOKIE 
2 c. brown sugar
1 c. shortening
2 eggs
2 c. flour, sifted
3 c. quick oats
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla

Cream sugar and shortening. Add beaten eggs and vanilla. Sift flours with soda and salt. Stir in oats. Stir in dry ingredients. Beat well. Take 1/4 cup white sugar. Roll bits of dough about the size of walnuts in sugar. Place balls on cookie sheet 3 inches apart. Bake at 375 degrees for 12 to 15 minutes. Makes 4 dozen cookies.
