PAM'S ARUGULA SALAD 
2 cups dry rotini or penne pasta (regular or whole wheat)
1 pkg. fresh arugula
2 cups chopped tomato
1/2 cup chopped white or red onion
1 cup crumbled feta cheese
2 tbsp. balsamic vinegar
3 tbsp. extra virgin olive oil (EVOO)
3 slices raw bacon

Cook pasta according to package instructions. Toss drained pasta into olive oil and balsamic vinegar in an extra large bowl.

Cook bacon until crispy, then chop or crumble and toss into pasta (with the bacon drippings, if desired!).

Toss in tomato, onion, and feta cheese. Add the arugula, toss and chill.
