BETH'S GARDEN PASTA SALAD | |
1 pkg. uncooked whole wheat pasta 1 cup fresh carrots, thinly sliced 2 stalks celery, thinly sliced 1/2 cup bell pepper, chopped 1 1/2 cups fresh cucumber, thinly sliced 2 cups fresh tomatoes, chopped 1/4 cup chives, chopped 1/2 vinaigrette dressing (your choice) 1/2 cup Parmesan cheese, grated Cook pasta according to package directions. Drain and rinse in cold water until cool. Mix pasta and all vegetables in big bowl. Mix in vinaigrette dressing. Chill in refrigerator for at least one hour. Stir in Parmesan cheese before serving.
