CARROT - DATE MUFFINS | |
1 c. oatmeal 1 c. flour 1/2 c. walnuts 1/2 c. brown sugar 1 tbsp. baking powder 1 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. salt 1 c. carrots, shredded 1/2 c. milk 1/2 c. dates, chopped 1/2 c. vegetable oil 1 egg 1 tsp. vanilla Heat oven to 425 degrees. Grease muffin tins. Combine oats, flour, walnuts, brown sugar, baking powder, cinnamon, soda and salt. Add combined remaining ingredients, stirring until moistened. Fill muffin cups. Bake 18 to 20 minutes. |
