OATMEAL-DATE-NUT MUFFINS 
1 c. old fashioned oats, uncooked
1/2 c. chopped pitted dates
1 c. milk
1 1/2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 lg. eggs, lightly beaten
2/3 c. firmly packed brown sugar
1/4 c. butter, melted
1/2 tsp. grated orange peel
1/3 c. chopped walnuts

Preheat oven to 400 degrees. Grease 12 (2 1/2 inch) muffin pan cups. Combine oats and dates with milk in medium bowl; let stand 10 minutes. Meanwhile, combine flour, baking powder and salt in large bowl. Stir eggs, sugar, butter and orange peel into oat mixture until blended.

Stir in dry ingredients just until combined. Stir in nuts. Spoon into prepared muffin cups. Bake 25 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool on wire rack. Makes 1 dozen.

Good recipe! Very tasty! I had to make a couple of substitutions based on my pantry though. Mixed peel was substituted for orange peel and pecans for walnuts. Still turned out good, but next time I want to make it as is. Definitely will make again!
