OATMEAL-DATE-NUT MUFFINS 
1 c. old-fashioned oats, uncooked
1/2 c. chopped pitted dates
1 c. milk
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 lg. eggs, lightly beaten
2/3 c. firmly packed brown sugar
1/4 c. butter, melted
1/2 tsp. grated orange peel
1/3 c. chopped walnuts

Preheat oven to 400 degrees. Grease 12 (2 1/2 inch) muffin pan cups. Combine oats and dates with milk in medium bowl; let stand 10 minutes.

Meanwhile, combine flour, baking powder and salt in large bowl. Stir eggs, sugar, butter and orange peel into oat mixture until blended. Stir in dry ingredients just until combined. Stir in nuts. Spoon into prepared muffin cups. Bake 25 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool on wire rack. Makes 1 dozen.
