EASY CHEESY POTATOES 
4 - 6 c. sliced potatoes
1 c. Hellmann's mayonnaise
2 med. onion, diced
1 lb. Velveeta, cubed small
Salt and pepper to taste

Day before serving. Drain and rinse potatoes well. Saute onion in small amount of butter. Mix with potatoes. Mix cubed cheese with mayonnaise. Mix into potatoes. Cover tightly and refrigerate for 24 hours. Bake at 350 degrees for one hour. Stir occasionally. Makes a large batch.
