“EASY BANANA BREAD” IS IN:

EASY BANANA BREAD 
3 bananas, well mashed
1 cup sugar
2 eggs, beaten
1/2 cup vegetable oil
2 cups all-purpose flour (1 cup can be whole wheat)
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts (optional)

Preheat oven to 350°F. Mash bananas in mixing bowl. Add sugar, eggs and oil, mixing well each time. Sift dry ingredients together and add to banana mixture.

Pour in greased 9x5-inch loaf pan and bake at 350°F for 55 to 60 minutes.

I keep this recipe on my computer desktop, because I make it so much. I've modified it so many different ways, and it's always delicious. Today, I made a vegan version by using a combo of ground flax and water instead of the eggs. The substitution is 1 tablespoon of flax plus 3 tablespoons of water to replace 1 egg. I also added unsweetened apple sauce to replace the oil. I always lower the sugar to about 3/4 cup, or even less. You'll never miss the extra sugar, especially if your bananas are nice and ripe/sweet! I also added some vanilla and a few shakes of cinnamon, and a handful of chopped pecans--yum! If you're making this batter as muffins--they will take about 20 minutes to bake. Have fun with this recipe and add whatever you want. It is very forgiving, and always delicious. Makes nice loaves or muffins to give as hostess gifts.

Very easy and family loved it! Used half of the sugar since I put chocolate chips, used the vanilla and cinnamon suggested by others and also added juice of small tangerine since I didn't have enough bananas! But be careful - I burned the top a bit by not watching close enough!

Moistest banana bread yet! I added the extra banana and replaced the oil with applesauce. Next time I would back off on the sugar or be sure to use unsweetened applesauce. I only had sweetened applesauce on hand and didn't realize it until I already put the cup of sugar in the batter.

I don't eat bananas although my kids and husband LOVE this recipe! I made a triple batch tonight which was too much for my kitchen aid mixer. I freeze bananas when they become too ripe to eat, then when I am ready to bake some banana bread I defrost them in a bowl, cut off the tops when they are soft and squeeze out the banana. I also use apple sauce instead of oil. I added cinnamon and MINI chocolate chips!! I freeze extra loafs I make. The kids and hubby LOVE this bread!!!

Made this tonight. Delicious but I did follow some of the commenters suggestions and tweek the recipe a bit. I used 4 bananas (they were small though), applesauce instead of oil, half brown sugar and half white and white-wheat flour. I also added vanilla and cinnamon and blueberries.
