FAST PIEROGI 
6 med. size potatoes
1/4 c. butter
1 1/2 c. shredded Cheddar cheese
1 med. size onion (chopped)
1 lb. box Rigatoni

Peel and boil 6 medium size potatoes. Don't drain water from potatoes, have enough water left so that it almost covers the potatoes. Mash the potatoes with 1/4 cup butter. Salt and pepper to taste.

Shred Cheddar cheese and let melt in the potatoes after you have mashed them. After cheese is melted mix well into potatoes. Mixture of potatoes may be lumpy.

Next chop 1 medium onion and saute in 1 stick butter. After onion is sauteed mix in with potato mixture.

Next cook 1/2 package of Rigatoni according to directions on package. When Rigatoni is cooked, drain and mix well into potato mixture.

Note: Boil potatoes in large pan so all mixing can be done in 1 pan.
