FRESH VEGETABLE LASAGNA 
1 box uncooked lasagna noodles
3 sm. zucchini, sliced
3 lg. carrots, sliced
2 red sweet peppers, sliced
4 green onions, sliced
1 (16 oz.) carton skimmed ricotta cheese
1 c. grated Parmesan cheese
1 lb. skim milk Mozzarella cheese
1 can Italian style tomatoes
1 can (28 oz.) tomato puree
2 tbsp. oil
Pepper to taste
1 c. celery, if desired

Heat oil and add vegetables fry 5 minutes. Spray Pam into a 10x15 baking dish. Add 1/2 uncooked noodles, half of other ingredients, in layers including tomatoes, puree and cheese. Add second layer. After everything is layered. Add 2 cups water. Cover with foil, that has been sprayed with Pam. Bake 1 1/2 hour at 350 degrees. Let set 1/2 hour before cutting. Freezes well.
