BROCCOLI CHEESE SOUP 
3 tbsp. chopped onion
3 tbsp. butter
3 tbsp. flour
1/4 tsp. white pepper
2 c. milk
1 c. grated American cheese
2 chicken bouillon cubes dissolved in 1 1/2 c. boiling water
1 head partially cooked broccoli, chopped stems, peeled and chopped also

Saute onion in butter until transparent. Blend in flour and pepper. Blend in milk and bouillon. Bring to a boil. Stir in cheese. Add broccoli; simmer until tender. Makes 5 to 6 cups.
