SHEPHERD'S PIE FOR BACHELORS 
1 medium onion, chopped
Montreal steak spice (or equivalent)
1 tbsp. flour
1 cup instant potatoes (directions as per package)
1 package (1.5 lb) lean ground beef
3/4 cup beef broth or make with beef bouillon
1 can corn (or whatever vegetables you like)
paprika for mashed potatoes

Preheat oven to 400°F.

Brown onions and beef on medium heat on stove-top for about 15 minutes, stirring with wooden spoon. Spoon off grease. Reduce heat to low and simmer and add a tablespoon of flour and stir for three minutes. Then add bouillon (beef broth) and about one heaping tablespoon of steak spice and stir until most of the liquid is absorbed.

Place meat mixture in baking dish, add corn or vegetable of your choice on top of meat. Then add the prepared instant mashed potatoes on top. Add some paprika to top of mashed potatoes.

Place baking dish in a preheated 400°F oven and cook uncovered for about 30-35 minutes.

You had me there until I read "instant mashed potatoes". Real mashed potatoes are so easy to fix, even for us bachelors. Try this with real potatoes; it's very good. Instant potatoes should be outlawed along with Velveeta (not real cheese). FYI, I always make extra mashed potatoes when I cook; I use them the next day for potato pancakes or for a dish like this. Use your leftovers - now that's easy cooking done right.

I tried this recipe because I have several food allergies. It was super easy, and super easy to modify for my allergies. My entire family went nuts after trying it! I used a few more mashed potatoes and a little less of the "man seasoning" - (Montreal Steak Seasning can be very intense. We cook with it a lot for BBQ steak). I used a 11x9 glass baking dish that I sprayed with some non-stick spray. This was easy, cheap and we give it a huge thumbs up! Thanks Roger!!

OMG this is just how my dad used to make shepherd's pie! He used canned green beans and carrots. If you can spare it, go that extra half hour and make real potatoes. No comparison in texture and flavor. :)
