CRANBERRY CRUNCH MUFFINS 
1 c. chopped cranberries
1 c. pecans
2 tbsp. grated orange peel
2 c. flour
1 tbsp. baking powder
3/4 c. brown sugar
2/3 c. orange juice
2 eggs
1/3 c. oil

Mix berries, pecans and orange peel. In another bowl, mix flour and baking powder. Add other ingredients and stir with fork until moistened (mixture will be lumpy). Fold in cranberry mixture. Spoon into muffin/cupcake papers. Bake for 12 minutes at 400 degrees.
