STRAWBERRY BANANA CRUNCH MUFFINS 
1 cup whole wheat flour
1/2 cup Kashi Golean Crunch Cereal
1/2 cup Splenda no calorie sweetener
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1 large banana
1 cup strawberries
2 tablespoons applesauce
1/2 cup whole milk
¼ cup eggbeaters
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Preheat oven to 350°F.

Combine the first 6 ingredients and mix well.

Combine the rest of the ingredients in another bowl. Stir in the dry ingredients just until moistened. Spray a 12 muffin pan with nonstick cooking spray and evenly distribute the mixture.

Bake for 15 to 20 minutes or until tops are golden and toothpick inserted in center of muffin comes out clean. Each muffin has approximately 65 calories.

Made this with blueberries instead of strawberries. I also added extra walnuts. Very good! Used paper muffin liners and they did stick to the paper quite a bit.
