COCONUT ALMOND COOKIES 
1 1/4 c. flour
1/4 tsp. salt
1/2 c. butter
1/3 c. sugar
1 egg, separated
1 tsp. almond extract
1 c. flaked coconut

In small bowl stir together flour and salt; set aside. In medium bowl cream butter and sugar until light and fluffy. Add egg yolk and extract; beat until blended. Add flour mix, beat until blended. Chill dough 2 hours. Roll into 1 inch balls. Dip in slightly beaten egg white, roll in coconut. Place on greased cookie sheet. Bake at 300 degrees for 20 to 25 minutes. Makes 2 dozen.
