SWEET POTATO SPAGHETTI | |
2 tbsp. lard 1 medium yellow onion, diced 3 celery stalks, diced 3 garlic cloves, minced 2 lb. ground venison (or beef) 1 large or two medium (2-3 cups) sweet potatoes, shredded (use a cheese grater or food processor) 2 tsp. oregano 2 tsp. salt 1/2 tsp. pepper 1 (15 oz.) can tomato sauce (Hunts) Melt lard in a large skillet over medium-high heat. Add diced onions and celery and sauté for 5 minutes. Add minced garlic and ground venison (or beef) and cook until browned. Add sweet potatoes, seasonings and tomato sauce, reduce heat to medium.
